Finally made last Sunday’s slow bite. This is one of my favorite dips. Tonight I made it with low fat mayonnaise and Chris couldn’t tell, so that’s good. It’s incredibly easy too.
Artichoke Dip
1 cup mozzarella cheese — cut in small cubes (I used shredded)
14 ounces canned artichokes packed in water — drained and chopped
1/2 cup grated Parmesan cheese
1 cup mayonnaise (I used low fat)
2 cloves minced garlic
Mix all ingredients together. Bake uncovered for half-hour at 350. Serve with crackers or I guess veggies would work too.

This is my favorite. I’ll have to try it. Did you do any points calculation?
LOL – I’m thinking that the low-fat mayo doesn’t have much of an impact on the final fat content and calorie count of this one! *sigh*
