Pina Colada Sherbet w/ MintBleary, bleary, bleary – Chris woke up at 4:00 to catch a 6:00 flight to Atlanta this morning and he was a bit noisier than usual. Not to mention he woke up at 3:00 to take some Advil (as we found out yesterday, Chris has shingles – which is another entry in itself – the topper to a banner week health-wise for the Riemanns, but I digress). So we have a brave house guest (brave b/c she’s not only dealing with Chris’s sudden diagnosis but the return of two stinky teen girls, also recovering from illnesses at sleep away camp) but because we have that brave house guest, I pushed off making this week’s Sunday Slow Scoopers dish until yesterday, so we could all enjoy it for dessert last night.
And enjoy it we did. Not to hold you in suspense or anything, but so far this was voted favorite by the youngins. As a matter of fact, Beck’s already working on other flavor combinations we must try (I think pineapple-mango will be next). House guest Colleen and I didn’t think it sucked either.
To start, this was by far the easiest recipe (well, maybe Tiramisu was as easy too but this is definitely less fattening). You start by throwing four cups cubed pineapple, 1 cup sugar, 1 cup coconut milk (not that creme of coconut you use to make the drink pina colada but real Thai coconut milk found in the Asian section of Shop Rite), 1T dark rum (I used Malibu coconut flavor rum as it’s less “strong” than dark rum and I knew the alcohol was a turnoff to the girls in the tiramisu), and 1t lime juice screwed up on that and almost used 1T in mine), into a blender and puree. Chill that mixture (I chilled mine overnight), and then throw it into your ice cream maker for however long your ice cream maker says and voila, you’re done!
After it came out of the ice cream maker, I put it into its container in the freezer until the night (I had mixed it in the morning), and we got to enjoy it with some Biscuits Roses de Reims (that’s pronounced Rance, with a rolling “R”, to those of us “in the know”), that Colleen brought – yummy!

We thought the Pina Colada was pretty good, too, and versatile. It almost begs to be enjoyed with somethin’ else, doesn’t it?
Kim, I’m sorry to hear about Chris’ shingles. That’s a viscious, painful affliction. I hope the doctors are agressive in treating it.
