This recipe has been making the rounds among my weight watchers groups for a few weeks now so I figured I’d give it a try. Since I had a large head of cabbage from my CSA and picked up some ground chicken breast the other night, I figured it was a good time.
It’s really more a process than a recipe but here it goes.
Ingredients
- 1lb ground chicken breast (the recipe called for ground beef but I used chicken)
- 1/2 a large head of cabbage, finely shredded or 1 bag of cole slaw mix
- 1 bag of broccoli slaw (I’ve seen versions with and without it. I used it).
- 3 green onions, sliced
- 2t canola oil
- 1T kikoman Stir fry sauce (I used a combination of Teriyaki and low sodium soy sauce instead – 2T)
- siracha sauce (optional).
Directions
Brown the chicken breast (or you can even use baby shrimp or a combination) in a large skillet coated with cooking spray. Remove to a bowl and set aside.
Add oil to the pan, add cabbage, broccoli slaw and whites of the onions. Stir fry until wilted over medium high heat. Return chicken to pan and add sauces. Cook through until chicken is warm.
Serve garnished with greens from onion and siracha if you like a kick.
