Each week in Weight Watchers we get a weekly circular with tips about that week’s topics and a recipe. A few weeks ago that recipe was for Garlic Seard Shrimp with Smoked Paprika. It seemed easy enough and a quick weeknight dinner so we gave it a go the other night.

It was good and over grits a filling dinner. Of course the recipe says it serves 4 at 3 smart points each but we were both light on points that day so we doubled our portion for a 6 smart point protein. I will definitely make it again.

Sauteed Shrimp with Smoked Paprika

Ingredients

  • 1 1/4 pounds large shrimp, peeled, deveined and patted dry
  • 1/4t salt
  • 4t olive oil (divided)
  • 6 garlic cloves, finely chopped
  • 1 1/2t smoked paprika
  • 1T chopped fresh parsley
  • 1T chopped fresh cilantro
  • 1/2t lemon juice

Directions

Toss shrimp with salt. Heat a large skillet over high heat until very hot. Coat pan with 1t of olive oil and heat to just smoking.  Add half the shrimp cook on one side for 10 seconds, flip for another 10 seconds. Remove to a dish. Repeat with remaining shrimp and 1t oil.

Reduce heat to medium high heat and add remaining 2t oil. Add garlic and cook just until fragrant (and not brown). Stir in paprika and shrimp. Reduce heat and cook until shrimp is paque about a minute. Stir in parsely, cilantro and lemon juice.

Now here WW says, serves with pan sauce spooned over top of shrimp but let me tell you, there was no “sauce” to spoon but the shrimp were coated nicely and very flavorful. We will make it again.
