Yesterday, David Lebovitz posted a recipe for Creamy Feta-Red Wine Dressing, which sounded easy and delicious. And since miraculously I had all the ingredients in the house, and I had been craving a “Greek” salad for weeks, I decided to whip up a big salad for lunch.

feta_dressing.gifMine contains mixed spring greens, sliced red onion, grape tomatoes, pignoli nuts and dried blueberries (antioxidants and all). His picture, of course, came out better than mine (hey, what do you expect using a cell phone camera) but here’s yesterday’s lunch.

    What about that buttermilk powder? Does anyone use that? I personally never have buttermilk in the house 😉 but would buy the powder if it’s a decent substitute.

    It was good Marta. I wish I had better quality feta but I was just excited to have everything on hand.
    I do usually have buttermilk, only b/c I use lowfat or fat free buttermilk in baking a lot. And remember, you can always create a buttermilk “equivalent” by using lemon juice and regular milk.

    How was it? I also saw it yesterday and thought it would be yummy. I also came across a goat cheese dressing but it also called for buttermilk. I tend to have David’s ingredients on-hand more than I have buttermilk. 🙂

    Thanks, this sounds great. I haven’t had a Greek salad in a while either – might try to make one this weekend.
