Chopped ApplesI woke this morning craving a muffin. Rather than sending the husband over to Bagel Fresh to pick up one of their muffins, I looked through some recipes on Weight Watchers and found this one. Of course I made a few adjustments based upon what ingredients I had on hand but points value came out the same. They were easy to make, the hardest (i.e., most time consuming part) was peeling and chopping the apples (I went with a fine chop in order to have a good distribution of apples).

 Ingredients

  • 1 medium apple, peeled and finely chopped
  • 1/2t cinnamon
  • 2t brown sugar
  • 1 Cup Buttermilk baking mix (I used Bisquick heart smart)
  • 1/4C granulated sugar
  • 1/4t cinnamon (I love cinnamon, so I added it to the batter too)
  • 1 egg, beaten well
  • 1/2C fat free milk (the recipe called for 2% but I don’t keep that in the house)
  • 1T Canola oil (the recipe called for melted reduced fat margarine, but I don’t keep that in the house either)

Directions

Preheat the oven to 350 degrees.

Mix the chopped apple, brown sugar and 1/2t cinnamon in a small bowl, set aside. Mix the baking mix, sugar and 1/4t cinnamon in a medium bowl. Add milk, oil and eggs to baking mix. Spoon into 6 paper-lined muffin cups (I sprayed mine with baking Pam first to ensure less sticking to the paper).  Top each muffin with roughly 2T of the apple mixture.

Bake in oven for 15-17 minutes, until golden brown. Now I baked them in my convection/microwave because my large oven is currently on the fritz, and it took almost 25 minutes until golden and they sprung back slightly when I lightly touched the top.

That’s it. You get 6 muffins at 4 Weight Watcher Points Plus each in about the same amount of time it takes you to get dressed, drive to the local bakery and return home, and yours are warm!
